How is post-Thanksgiving treating you? Well, I gained about 5 pounds easy.
The last week has been spent trying to trim down….I expect this pattern to hold until my mom shows up right before Christmas with about a million treats that I just won’t be able to decline.. You know.. fudge…Hello Dollies… Cheeseball… Pineapple Yum Yum cake.. Need I say more?
Whatever, life is too short to begrudge the yummier side of things.
I’m just fortifying myself with lots of greens and weight lifting sessions before she gets here.
One of my favorite go-to lunches at the moment is so simple! Its delicious, good for you and the macros are great.
Tuna Avocado Toast
1 can white tuna in water, drained
1/2 an avocado, smashed
salt & pepper to taste
Favorite low carb bread.
Just mix up the avocado & tuna together in a bowl, add salt & pepper. Then spread on toast.
You can also eat it right out of the bowl with crackers. I did that yesterday with the first half of my avocado. See pic below!
My favorite low carb bread is made by Thin Slim Foods and can be found here. I LOVE the macros in this bread. I keep it in the freezer and pop it into the toaster oven before I eat it.
And the crackers I ate with my tuna & avocado yesterday are Nut-Thins, also super yummy. I found them in Whole Foods.
