You guys ever get a vegetable “goodie” box? There are a couple places here that offer fresh local vegetables delivered in a recycled box. Some will even deliver to your door, others you meet at a drop off location.
Its pretty neat. You pay a monthly fee (the amount depends on the size box you choose) and they give you fresh veggies every week in a box you return to them when you go to pick up your next box.
You never know what you’re going to get in the box, so its a surprise each time. I love this idea! We’re big vegetable eaters anyway, but the idea of trying something new that you might not normally pick up at the store has great appeal. And I like experimenting with new ingredients!
We lucked out getting to try this veggie box thing when friends of ours (who subscribe to a local veggie box) were going out of town, but didn’t want their veggie pick-up to go to waste, gave us their empty box and let us pick up their delivery that week. (so sweet of them!) and now I’m ready to sign up too!
In a small box, we got asparagus, bok choy, kale, strawberries, fresh garlic, and a pint of whole radishes! Everything was super fresh and delicious!
Now, I’ve had radishes before and typically eat them raw, but I wasn’t sure how else to prepare them. I wanted to make them with dinner one night and my all time favorite solution to cooking vegetables is to roast them.
In my opinion, roasting is THE best way to prepare most vegetables. I can’t tell you how often I’ve had people tell me that they hate Brussels sprouts or broccoli or asparagus… until I tell them to prepare them this way.
Changes things in a BIG way. Trust me.
And I swear its the easiest thing in the world. Try this with your radishes. Or broccoli, or asparagus… carrots, potatoes, Brussels sprouts. Green beans. You get the idea! Who says you have to steam everything?
- 1 pint whole radishes
- 2-3 tbsp. extra virgin olive oil
- 1 tsp. garlic powder
- 1 tsp. onion powder
- 1 tsp. thyme
- salt & pepper to taste
- Preheat oven to 425.
- Wash radishes, slice off ends & slice in half.
- Place in a medium bowl and add ingredients. Toss everything to coat the radishes in oil & seasoning.
- Line a baking sheet with parchment paper. Pour radishes on baking sheet and spread out.
- Cook in oven for 30-35 minutes until toasty looking.
